This month as I take on the Whole30 challenge (hoping to stay healthy during these last frozen weeks before Spring) I've been looking for that perfect go-to snack. My appetite has been ravenous during this challenge, craving lots of fats and protein to sustain me throughout my full days! These Lush Balls have arrived through lots of trial and error and make for the most delicious, rich snack after a salty sweat sesh or a few runs through the trees.
1 cup unsweetened coconut shreds
1/2 cup coconut oil, melted
1/4 cup ghee
1/4 cup sunflower seeds, roasted + salted
1/4 cup pepitas
1 cup Moxie Nosh* nut butter of choice
1 tsp cinnamon
3 medjool dates (pitted)
1/3 cup unsweetened coconut cream
1. Mix all ingredients in a food processor until dough begins to form.
2. Roll heaping tablespoons of dough into a bowl and place in a tight seal freezer safe container, separating stacks of Lush balls with unbleached parchment paper.
3.Freeze wet Lush balls in air tight storage container.
When ready to eat, pull from freezer and let soften for about 5 minutes for optimum flavor!
